I had some (2) bananas that were a bit over ripe as well as a few (3) peaches that were soon to turn. I needed to use all of them soon so I decided to modify my great grandmom’s banana nut bread recipe. The outcome was a moist, summery loaf that makes a great breakfast.

Recipe:
1/4 cup Vegetable Oil
3/4 cup Sugar
1 Egg
2 Over Ripe Bananas
3 Ripe Peaches
3/4 cup All Purpose Flour
3/4 cup Almond Flour
1 tsp Baking Powder
1/2 cup Almonds

Preheat your over to 350°. In a large bowl mix the oil and sugar until it is well blended. Add the egg to the mixture and mix well. Slice the bananas and peaches then place the slices in the mixture. Once you have added the fruit to the mixture use a potato masher to mash the fruit then mix well. In a separate bowl combine the two flours, as well as the baking powder. Gradually mix in the flour mixture to the fruit mixture and make sure everything is well blended. Once all the flour has been added stir in the chopped almonds. Pour the mixture into a greased loaf pan and bake at 350° until a toothpick comes out clean from the middle of the loaf, about 45 minutes.
